Ingredients

  • 8 oz almond paste
  • 2 tbsp granulated sugar
  • 2 tbsp whole milk (to loosen the paste)
  • 2 frozen puff pastry sheets, thawed
  • 2 large eggs (for egg wash), beaten

Instructions

  1. 1

Preheat the oven to 400F and line a baking sheet with parchment.

  2. 2

Knead 8 oz almond paste with 2 tbsp granulated sugar and 2 tbsp whole milk (to loosen the paste) until smooth and pliable.

  3. 3

Shape the almond paste into one log per pastry sheet, about 1 inch thick, and lay each log along one edge of a sheet. Use 2 frozen puff pastry sheets, thawed.

  4. 4

Roll the pastry tightly around the paste to form a log and seal the seam. Place the logs seam side down on the sheet.

  5. 5

Brush the logs all over with 2 beaten large eggs (for egg wash). Cut three shallow diagonal slits into the top of each.

  6. 6

Bake 25 to 30 minutes, until deep golden and puffed. Cool completely, then slice into 1-inch pieces.
