Ingredients

  • 2 lbs boneless lamb shoulder, cubed
  • 2 cups dry red wine
  • 2 tbsp red wine vinegar
  • 6 cloves garlic, smashed
  • 2 tsp sweet paprika
  • 2 bay leaves
  • 1 onion yellow onion, sliced
  • 2 tbsp olive oil
  • 1 cup water
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper

Instructions

  1. 1

Combine 2 lbs cubed boneless lamb shoulder, 2 cups dry red wine, 2 tbsp red wine vinegar, 6 cloves smashed garlic, 2 tsp sweet paprika, 2 bay leaves, half of 1 tsp kosher salt, and 1/2 tsp ground black pepper in a bowl. Cover and refrigerate 24 hours, stirring once.

  2. 2

Heat the oven to 325°F. Drain the lamb, reserving the marinade, and pat the meat dry.

  3. 3

Heat 2 tbsp olive oil in a Dutch oven over medium-high heat. Brown the lamb in batches, 4 to 5 minutes per batch. Remove it.

  4. 4

Lower the heat to medium. Cook 1 onion sliced yellow onion 5 minutes, scraping up the browned bits. Return the lamb, pour in the marinade and 1 cup water, and add the remaining 1 tsp kosher salt.

  5. 5

Cover and bake 2 1/2 to 3 hours, until the lamb is fork-tender and reaches 190°F inside. Add a splash of water if the pot runs dry.

  6. 6

Remove the bay leaves. Skim the fat from the sauce. Serve the lamb with the sauce spooned over, with bread or potatoes.

Questions

What is Chanfana?

Lamb shoulder marinated overnight in red wine, vinegar, garlic, and paprika, then braised slowly until fork-tender. The dish is traditionally made with goat in central Portugal, and lamb stands in here. Plan ahead: marinate the lamb 24 hours. This reference files it under Portuguese dinner: made in the oven, rated medium and about 205 minutes start to finish.

How much time should I plan for Chanfana?

As written, 205 minutes: 25 of prep and 180 of cooking. The longest single stretch is the hands-off wait in step 1, 24 hours. That wait sits outside the stated prep and cook times, so plan around it.

What temperature do I cook Chanfana at?

For Chanfana, the oven is set to 325 F (about 165 C) in step 2. The longest stretch at that heat is 3 hours, in step 5. The target internal temperature is 190 F (about 90 C), given in step 5. A probe thermometer removes the guesswork.

What should Chanfana look like when it is ready?

Go by the cues in the method rather than the clock. Step 5: cook until the lamb is fork-tender and reaches 190°F inside. A reading of 190 F on a thermometer settles it.

Can I skip the searing in Chanfana?

Step 3 reads: "Brown the lamb in batches, 4 to 5 minutes per batch." You can, but you give up flavor. The browning in step 3 builds the savory base the rest of the dish is seasoned against. Give the pieces room so the pan stays hot.

Is there a substitute for red wine in Chanfana?

The entry for Chanfana calls for 2 cups dry red wine. In its place: Use beef or mushroom stock with a tablespoon of red wine vinegar or balsamic per cup. The sauce will be a little less deep.

Can I start Chanfana the day before?

Yes. Step 1 is a built-in pause of 24 hours: "Cover and refrigerate 24 hours, stirring once." Do everything up to that point ahead of time and pick up at step 2 when you are ready to finish.
