Croquetas de Camarão
Portuguese shrimp croquettes with a creamy, seasoned shrimp filling encased in crispy golden breadcrumbs. Served with lemon for brightness, these elegant appetizers are irresistible.
Ingredients
- 4 tbsp butter
- 1/4 cup yellow onion, finely diced
- 2 garlic cloves, minced
- 1/4 cup all-purpose flour
- 1 cup whole milk
- 12 oz cooked shrimp (peeled deveined), finely chopped
- 1/4 cup grated Parmesan cheese
- 1/4 tsp salt
- 1/8 tsp black pepper
- pinch cayenne pepper
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 2 cups vegetable oil (for frying)
- 1 fresh lemon, cut into wedges

Make the filling: Melt 4 tbsp butter in a saucepan over medium heat. Add 1/4 cup finely diced yellow onion and cook until softened, about 2 minutes.

Add 2 minced garlic cloves and cook for 1 minute. Sprinkle 1/4 cup all-purpose flour over the mixture and stir to create a paste, cooking for 1 minute.

Gradually add 1 cup whole milk, stirring constantly to avoid lumps. Continue cooking until the sauce thickens, about 5-7 minutes.

Stir in 12 oz finely chopped cooked shrimp (peeled deveined), 1/4 cup grated Parmesan cheese, 1/4 tsp salt, 1/8 tsp black pepper, and pinch cayenne pepper. Mix until well combined. Spread on a plate to cool completely, then refrigerate for at least 2 hours until firm.

Set up a breading station: place 2 beaten eggs in one shallow bowl and 1 cup panko breadcrumbs in another.

Using a small ice cream scoop or spoon, form the chilled mixture into cylinders or balls, about 1.5 inches long.

Roll each croquette in the eggs, then coat thoroughly in breadcrumbs, pressing gently so the coating adheres.

Heat 2 cups vegetable oil (for frying) in a deep pot or fryer to 350°F.

Carefully lower the croquettes into the hot oil, frying 4-6 at a time, until golden brown, about 2-3 minutes per side.

Remove with a slotted spoon and drain on paper towels. Serve immediately with 1 cut into wedges fresh lemon.
