  • 1 cup fresh flat-leaf parsley, finely chopped
  • 6 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil

  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil (for cooking)

    Make the chimichurri sauce: combine 1 cup finely chopped fresh flat-leaf parsley, 6 cloves minced garlic, 1/4 cup red wine vinegar, 1/2 cup olive oil, 1 tsp dried oregano, 1/4 tsp red pepper flakes, 1/2 tsp salt, and 1/4 tsp black pepper in a bowl. Mix well.

    Reserve half of the chimichurri for serving. Use the remaining half to marinate the boneless, skinless chicken breasts.

    Place boneless, skinless chicken breasts in a shallow dish and pour the marinade over it, ensuring it's fully coated. Marinate for at least 15 minutes at room temperature (up to 4 hours in the refrigerator).
