Green Chile Mac and Cheese

Ingredients
- 1 lb elbow pasta
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- 8 oz sharp cheddar cheese, shredded
- 1/2 cup roasted green chiles (canned or fresh), drained, chopped
- 1/2 tsp kosher salt
- 1/4 tsp black pepper

Cook 1 lb elbow pasta according to package directions until al dente. Drain and set aside.

In a large saucepan, melt 2 tbsp butter over medium heat. Whisk in 2 tbsp all-purpose flour to form a roux, stirring for 1 minute.

Gradually whisk in 2 cups whole milk, stirring constantly until the sauce thickens, about 5 minutes.

Remove from heat and stir in 8 oz sharp cheddar cheese, shredded until melted and smooth.

Add cooked pasta, 1/2 cup drained, chopped roasted green chiles (canned or fresh), 1/2 tsp kosher salt, and 1/4 tsp black pepper. Stir to combine.
