Southwestern Chicken Tortilla Soup
A robust chicken soup simmered with fire-roasted tomatoes, corn, black beans, and warm Southwestern spices. Tender shredded chicken and sliced corn tortillas build thick, rich flavor in every bowl.
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 1 jalapeno pepper, seeded, minced
- 1.5 lbs boneless chicken breasts
- 4 cups chicken broth
- 2 cans fire-roasted diced tomatoes
- 1 can black beans, drained
- 1 cup corn kernels
- 2 tsp chili powder
- 1 tsp ground cumin
- 6 corn tortillas, sliced
- 2 tbsp lime juice

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 diced yellow onion, 4 minced garlic cloves, and 1 seeded, minced jalapeno pepper, cooking for 5 minutes until softened.

Stir in 2 tsp chili powder and 1 tsp ground cumin until fragrant, about 1 minute.

Pour in 4 cups chicken broth and 2 cans fire-roasted diced tomatoes, then submerge 1.5 lbs boneless chicken breasts.

Bring to a simmer and cook for 15 to 20 minutes until boneless chicken breasts reaches an internal temperature of 165°F.

Remove boneless chicken breasts, shred using two forks, and return it to the pot.

Stir in 1 can drained black beans, 1 cup corn kernels, 6 sliced corn tortillas, and 2 tbsp lime juice, simmering for 5 minutes before serving.
