Mignonette Sauce
A classic French condiment of finely minced shallots macerated in red wine vinegar with cracked black pepper, traditionally served alongside fresh oysters on the half shell.
Ingredients
- 1/4 cup shallots, finely minced
- 1/2 cup red wine vinegar
- 1/2 tsp black pepper, coarsely cracked
- 1/4 tsp kosher salt

Place 1/4 cup finely minced shallots in a small bowl.

Pour 1/2 cup red wine vinegar over the shallots and add 1/2 tsp coarsely cracked black pepper and 1/4 tsp kosher salt.

Stir to combine and let the mixture macerate at room temperature for at least 30 minutes so the shallots soften and mellow.

Taste and adjust seasoning. Serve chilled in a small ramekin alongside oysters or grilled fish.
