Ponzu Sauce

A bright, citrusy Japanese dipping sauce combining soy sauce with yuzu or lemon juice, mirin, and dashi. Wonderful with sashimi, gyoza, shabu-shabu, and grilled meats.

Ingredients

  • 1/3 cup soy sauce
  • 1/3 cup fresh lemon or yuzu juice
  • 2 tbsp mirin
  • 2 tbsp rice wine vinegar
  • 1/4 cup dashi stock or water
  • 2 green onion, thinly sliced
  • 1/2 tsp fresh ginger, grated

Instructions

    Combine 1/3 cup soy sauce, 1/3 cup fresh lemon or yuzu juice, 2 tbsp mirin, 2 tbsp rice wine vinegar, and 1/4 cup dashi stock or water in a small bowl or jar.

    Whisk or stir well to combine.

    Add 1/2 tsp grated fresh ginger and stir to incorporate.

    Taste and adjust the balance of soy, citrus, or mirin to your liking.

    Scatter 2 thinly sliced green onion over the top just before serving.

    For a cleaner sauce, strain before serving. Refrigerate for up to 2 weeks.
