Instructions

    Heat 2 tbsp olive oil in a large pot over medium-high heat. Working in batches, brown 2 lbs cubed beef chuck, cut into cubes on all sides, about 3 minutes per side. Set aside.

    Add 1 lb diced yellow onions to the pot and sauté until softened, about 8 minutes. Stir in 4 minced garlic cloves and cook 1 minute more.

    Reduce heat to medium. Sprinkle 4 tbsp Hungarian sweet paprika over the onions and stir constantly for 2 minutes to toast the spice.

    Return beef to the pot. Add 2 tbsp tomato paste and stir well. Pour in 3 cups beef broth and add 1/2 tsp caraway seeds, 1 tsp salt, and 1/2 tsp black pepper.
