A Hungarian jewel featuring four distinct layers: apple, plum, walnut, and poppy seed filling between tender pastry. Complex, impressive, and deeply satisfying.
Ingredients
- 3 cups all-purpose flour
- 1/2 cup granulated sugar
- 6 tbsp unsalted butter, softened
- 2 egg yolks
- 1/4 tsp salt
- 2 lbs granny smith apples, peeled, cored, sliced thin
- 1/2 cup plum jam
- 2/3 cup ground walnuts
- 1/2 cup poppy seeds
- 1/4 cup whole milk
- 1/2 tsp ground cinnamon
- 1/4 cup powdered sugar (for dusting)

Preheat oven to 350°F. In a bowl, combine 3 cups all-purpose flour, 1/2 cup granulated sugar, and 1/4 tsp salt. Cut in 6 tbsp unsalted butter, softened until resembling breadcrumbs. Mix in 2 egg yolks until dough forms. Divide into 4 equal portions, wrap, and chill 30 minutes.

Prepare fillings: Toss 2 lbs peeled, cored, sliced thin granny smith apples with 1/2 tsp ground cinnamon. Have 1/2 cup plum jam, 2/3 cup ground walnuts, and 1/2 cup poppy seeds ready.

Roll out first dough portion to fit a 9x13 baking dish. Layer into dish. Spread apples evenly on top.

Roll out second portion, layer it, spread jam on top.

Roll out third portion, layer it, spread walnuts mixed with 1 tbsp sugar on top.

Roll out final portion, layer on top. Brush with 1/4 cup whole milk.

Bake 45-50 minutes until golden brown and a toothpick inserted through all layers comes out clean.

Cool to room temperature. Dust generously with 1/4 cup powdered sugar (for dusting) before serving. Cut into squares.
