  • 1/4 cup whole milk
  • 1/2 tsp ground cinnamon
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. 1

Preheat oven to 350°F. In a bowl, combine 3 cups all-purpose flour, 1/2 cup granulated sugar, and 1/4 tsp salt. Cut in 6 tbsp unsalted butter, softened until resembling breadcrumbs. Mix in 2 egg yolks until dough forms. Divide into 4 equal portions, wrap, and chill 30 minutes.

Roll out third portion, layer it, spread walnuts mixed with 1 tbsp sugar on top.

  6. 6

Roll out final portion, layer on top. Brush with 1/4 cup whole milk.

  7. 7

Bake 45-50 minutes until golden brown and a toothpick inserted through all layers comes out clean.

  8. 8

Cool to room temperature. Dust generously with 1/4 cup powdered sugar (for dusting) before serving. Cut into squares.

Questions

Can I make Flódni dairy-free?

Yes. The dairy in this entry is 6 tbsp unsalted butter, softened, 1/4 cup whole milk. Swap the butter for olive oil where it melts, or a plant-based block butter where it is creamed; the milk for unsweetened oat or soy milk. The richness shifts slightly, but the method does not change.

Can I make Flódni gluten-free?

Yes. The gluten in this entry is 3 cups all-purpose flour. Swap the flour for a 1-to-1 gluten-free baking blend (where it only thickens a sauce, half as much cornstarch also works). Everything else proceeds as written.

Can I make Flódni ahead?

Yes, it takes well to being made ahead. Store it airtight: two to three days at room temperature or up to a week refrigerated. It freezes for up to two months; thaw at room temperature.

Can I halve or double Flódni?

Yes. As written it serves 12. Every ingredient in this entry carries precomputed half and double quantities, and the app's batch dial rewrites them inside each step. Doubled, split it across two pans and rotate them halfway; one crowded pan bakes unevenly.
