Poulet Rôti
A classic French roasted chicken with herbs, garlic, and lemon. Golden and juicy inside with crispy skin, this bistro favorite is simple elegance on a plate.
Ingredients
- 4 lbs whole chicken
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 6 garlic cloves, minced
- 2 tbsp unsalted butter, softened
- 1 lemon
- 2 tbsp olive oil

Preheat oven to 425°F. Pat 4 lbs whole chicken dry with paper towels. Rub the cavity with half the 6 minced garlic cloves and place 1 lemon inside.

In a small bowl, mix 2 tbsp softened unsalted butter, remaining 6 minced garlic cloves, 4 sprigs fresh thyme, 2 sprigs fresh rosemary, 1 tsp kosher salt, and 1/2 tsp black pepper. Rub this mixture all over the whole chicken, under the skin and all over the exterior.

Drizzle with 2 tbsp olive oil. Place whole chicken breast-side up on a roasting pan.

Roast for 55 to 65 minutes, until a meat thermometer inserted into the thickest part of the thigh reads 165°F. The skin should be golden and crispy.

Let rest for 5 minutes before carving. Serve with pan juices drizzled over top.
