Questions

What is Prego no Pão?

Thin garlic and paprika steak piled into a crusty roll with garlic butter and its own pan juices, the sandwich that anchors Portuguese snack bars and cafes. Plan ahead: marinate the beef 1 hour. This reference files it under Portuguese lunch: made on the stovetop, rated easy and about 25 minutes start to finish.

What temperature does Prego no Pão cook at?

Step 2 reads: "Cook the beef in batches 1 to 2 minutes per side, until the thickest slices reach 145°F inside." That is about 65 C.

How long should Prego no Pão marinate?

Step 1 reads: "Marinate 1 hour at room temperature." Follow the time in step 1. Shorter still seasons the surface. Much longer is not better with acidic marinades, which turn the outside of meat or fish mushy.

What can I use instead of white wine in Prego no Pão?

The entry for Prego no Pão calls for 1/4 cup dry white wine. In its place: Use chicken or vegetable stock with a teaspoon of white wine vinegar or lemon juice per half cup for the acidity.

Can I make Prego no Pão dairy-free?

Yes. The dairy in Prego no Pão is 2 tbsp unsalted butter, softened. Swap the butter for olive oil where it melts, or a plant-based block butter where it is creamed. The richness shifts slightly, but the method does not change.

Can I start Prego no Pão the day before?

Yes. Step 1 is a built-in pause of 1 hour: "Marinate 1 hour at room temperature." Do everything up to that point ahead of time and pick up at step 2 when you are ready to finish.
