Quesadillas Salvadoreñas
Toasted corn tortillas filled with melted cheese and served with a warm tomato sauce. A simple, comforting lunch or appetizer.
Ingredients
- 8 corn tortillas
- 2 cups Oaxaca cheese (or mozzarella), shredded
- 4 tbsp butter
- 1 cup tomato sauce
- 1/2 onion, minced
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp ground cumin

Warm 1 cup tomato sauce in a small saucepan over low heat. Sauté 1/2 minced onion and 2 cloves minced garlic in the sauce, then season with salt, black pepper, and 1/4 tsp ground cumin. Keep warm.

Place 2 cups shredded Oaxaca cheese (or mozzarella) on one half of each 8 corn tortillas.

Fold each tortilla in half to cover the cheese.

Heat 4 tbsp butter in a large skillet over medium heat.

Working in batches, toast the folded tortillas for 2 to 3 minutes per side until golden and the cheese begins to melt. Transfer to a plate.

Serve hot with the warm sauce on the side for dipping.
