Ingredients

  • 3 cups all-purpose flour
  • 2 large eggs, beaten
  • 1/2 cup warm water
  • 1 tsp salt
  • 1 lb mushrooms, finely chopped
  • 1 medium yellow onion, finely diced
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/4 tsp salt (for filling)
  • 1/4 tsp ground black pepper
  • 2 tbsp fresh dill, chopped

Instructions

  1. 1

Mix 3 cups all-purpose flour and 1 tsp salt with 2 beaten large eggs and 1/2 cup warm water to form a stiff dough. Knead 8 minutes, wrap, and rest 30 minutes.

  2. 2

Melt half of 4 tbsp unsalted butter in a skillet over medium heat. Cook 1 medium finely diced yellow onion 5 minutes, then add 1 lb finely chopped mushrooms and cook until all their liquid has evaporated and they are browned, about 10 minutes.

  3. 3

Season the filling with 1/4 tsp salt (for filling) and 1/4 tsp ground black pepper and cool. Stir in 2 tbsp chopped fresh dill.

  4. 4

Roll the dough very thin and cut into 2-inch squares. Place about 1/2 teaspoon of filling in the center of each and pinch two opposite corners together, shaping an ear.

  5. 5

Boil the vushka in salted water, 1 tbsp salt per 4 cups water, 3 to 4 minutes after they float to the top, then drain.

  6. 6

Melt the remaining unsalted butter with 2 cloves minced garlic and toss the vushka in it. Serve hot.

Questions

What is Vushka?

Vushka are small Ukrainian dumplings shaped like little ears, filled with sauteed mushrooms and onion, and served in a garlic butter. They are a traditional Carpathian dish eaten on fasting and meatless days. This reference files it under Ukrainian dinner: made on the stovetop, rated hard and about 70 minutes start to finish.

How long does Vushka take?

As written, 70 minutes: 50 of prep and 20 of cooking. The longest single stretch is step 1 (30 minutes): "Knead 8 minutes, wrap, and rest 30 minutes."

Can I make Vushka dairy-free?

Yes. The dairy in Vushka is 4 tbsp unsalted butter. Swap the butter for olive oil where it melts, or a plant-based block butter where it is creamed. The richness shifts slightly, but the method does not change.

Can I make Vushka gluten-free?

Yes. The gluten in Vushka is 3 cups all-purpose flour. Swap the flour for a 1-to-1 gluten-free baking blend (where it only thickens a sauce, half as much cornstarch also works). Everything else proceeds as written.

Does Vushka contain eggs?

Yes: 2 large eggs, beaten. The full allergen list for this entry is gluten, dairy and eggs. Packaged ingredients vary by brand, so check labels if the allergy is serious.
