Questions

What is Oseledets Pid Shuboyu?

Oseledets pid shuboyu, herring under a fur coat, is a layered Ukrainian salad of salted herring, onion, and grated potato, carrot, beet, and egg under mayonnaise. It is a standard dish at holiday tables. Plan ahead: chill the salad at least 4 hours. This reference files it under Ukrainian salad: made on the stovetop, rated medium and about 95 minutes start to finish.

How much time should I plan for Oseledets Pid Shuboyu?

As written, 95 minutes: 35 of prep and 60 of cooking. The longest single stretch is the hands-off wait in step 1, 12 hours. That wait sits outside the stated prep and cook times, so plan around it.

Why pat it dry first in Oseledets Pid Shuboyu?

Step 1 reads: "Rinse 8 oz salted herring fillets under cold water, soak it in cold water 8 to 12 hours, changing the water 2 or 3 times, then drain, pat dry, and chop finely." Surface water has to boil off before anything can brown. Drying at step 1 means the food sears in the first minute instead of steaming.

Does Oseledets Pid Shuboyu contain eggs?

Yes: 2 large eggs, hard-boiled, grated and 1 cup mayonnaise. The full allergen list for this entry is eggs. Packaged ingredients vary by brand, so check labels if the allergy is serious.

Can I make Oseledets Pid Shuboyu ahead?

Yes, it takes well to being made ahead. The base of Oseledets Pid Shuboyu is potatoes, which holds up: it keeps three to four days refrigerated and tastes better after a few hours, once the dressing has soaked in. Hold back a spoonful of dressing to freshen it before serving. It does not freeze.
