Ingredients

  • 2 lbs beef top round steaks, pounded thin
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 2 tbsp Dijon mustard
  • 4 oz bacon, diced
  • 4 medium dill pickles, cut in strips
  • 1 medium yellow onion, finely diced
  • 8 wooden toothpicks
  • 1/4 cup all-purpose flour
  • 2 tbsp vegetable oil
  • 2 cups beef broth
  • 2 bay leaves

Instructions

  1. 1

Pound each 2 lbs pounded thin beef top round steaks piece to about 1/4 inch thick between sheets of plastic wrap. Season with 1 tsp kosher salt and 1/2 tsp ground black pepper.

  2. 2

Spread a thin layer of 2 tbsp Dijon mustard over each piece. Top with 4 oz diced bacon, 4 medium cut in strips dill pickles, and 1 medium finely diced yellow onion, leaving a border at the edges.

  3. 3

Roll each piece up tightly from the short end and secure it with 8 wooden toothpicks.

  4. 4

Dust the rolls with 1/4 cup all-purpose flour. Heat 2 tbsp vegetable oil in a Dutch oven over medium-high heat and brown the rolls on all sides, about 8 minutes total. Set them on a plate.

  5. 5

Reduce the heat to medium. Pour in 2 cups beef broth, add 2 bay leaves, and scrape up the browned bits. Return the rolls to the pot.

  6. 6

Cover and simmer over low heat for 1 1/2 hours, turning once, until a fork slides easily into the meat.

  7. 7

Check the center of a roll with an instant-read thermometer; it must read at least 160°F, and keep simmering until a fork slides easily into the meat, usually near 190°F. Remove the toothpicks and discard 2 bay leaves.

  8. 8

Slice each roll in half and serve with the pan broth spooned over.

The browning in step 4 builds the savory base the rest of the dish is seasoned against. Give the pieces room so the pan stays hot.

Beyond a knife and a board, the method uses a Dutch oven (step 4) and a probe thermometer (step 7). If you do not have one, any heavy pot with a tight lid does the work of the Dutch oven.

Yes. Turkey bacon renders almost no fat, so add a tablespoon of oil wherever the method counts on the drippings. As written, the entry for Zrazy Zawijane uses 4 oz bacon, diced.
