Zupa Ogorkowa
A traditional Polish dill pickle soup with a rich beef broth, barley, and tangy dill pickles. This hearty and comforting soup is uniquely Polish and deeply satisfying.
Ingredients
- 8 cup beef broth
- 1.5 lb beef stew meat, cut into chunks
- 0.5 cup pearl barley
- 1 lb potatoes, diced
- 2/3 medium carrots, sliced
- 0.5 medium onion, diced
- 1 cup dill pickle spears, chopped
- 0.5 cup pickle juice
- 2 tbsp fresh dill, chopped
- 0.5 cup sour cream
- 0.5 tsp salt
- 0.25 tsp black pepper

In a large pot, bring 8 cup beef broth to a boil. Add the 1.5 lb cut into chunks beef stew meat and return to a simmer.

Skim any foam that rises to the surface, then add 0.5 cup pearl barley, 0.5 medium diced onion, and 2/3 medium sliced carrots.

Reduce heat and simmer for 30 minutes until the beef is nearly tender.

Add 1 lb diced potatoes and continue simmering for 15 to 20 minutes until both the potatoes and beef are very tender.

Stir in 1 cup chopped dill pickle spears, 0.5 cup pickle juice, and 2 tbsp chopped fresh dill.

Simmer for 5 to 10 minutes to allow the flavors to meld.

Remove from heat and stir in 0.5 cup sour cream until well combined.

Season with 0.5 tsp salt and 0.25 tsp black pepper to taste.
