Air Fryer Enchiladas Suizas
Crispy-edged flour tortillas filled with seasoned shredded chicken and smothered in tangy green tomatillo sauce with melted Oaxaca cheese. A lighter, trendy take on a classic Tex-Mex favorite.
Ingredients
- 2 lbs cooked chicken (rotisserie or poached), shredded
- 8 flour tortillas (8-inch)
- 1 lb tomatillos (fresh or canned), husked
- 1/2 white onion, quartered
- 2 serrano peppers, stemmed
- 2 garlic cloves
- 1 cup sour cream
- 1/2 cup chicken broth
- 2 cups Oaxaca or mozzarella cheese
- 2 tbsp fresh cilantro, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper

Make the sauce: blend 1 lb husked tomatillos (fresh or canned), 1/2 quartered white onion, 2 serrano peppers, 2 garlic cloves, 1/2 tsp salt, and 1/4 tsp black pepper in a blender until smooth.

In a saucepan, warm the tomatillo sauce over medium heat for 3 minutes. Stir in half the 1 cup sour cream and 1/2 cup chicken broth. Season to taste and keep warm.

Mix 2 lbs shredded cooked chicken (rotisserie or poached) with remaining sour cream in a bowl. Divide the cooked chicken (rotisserie or poached) mixture evenly among 8 flour tortillas (8-inch).

Roll each flour tortillas (8-inch) tightly and arrange seam-side down in an air fryer-safe baking dish that fits in your air fryer (or roll individually).

Coat the seam of each flour tortillas (8-inch) lightly with as needed cooking spray. Pour remaining sauce over the enchiladas and top with 2 cups Oaxaca or mozzarella cheese.

Air fry at 375°F for 12-15 minutes until the Oaxaca or mozzarella cheese is melted and bubbly and the edges of the flour tortillas (8-inch) are lightly crisped.

Garnish with fresh 2 tbsp chopped fresh cilantro and serve immediately.
