Chicken Quesadillas
Golden, crispy tortillas filled with seasoned chicken and melted cheese. A quick, satisfying lunch or snack.
Ingredients
- 2 chicken breast, cooked, shredded
- 1 cup cheese, shredded
- 4 flour tortillas
- 1/4 cup salsa

Heat a large non-stick skillet or griddle over medium heat.

Place one flour tortillas on a clean work surface.

Spread about 1/4 cup of cooked, shredded chicken breast evenly over half of the tortilla.

Sprinkle about 2 tablespoons of shredded cheese over the chicken.

Fold the empty half of the tortilla over the filled half to create a half-moon shape.

Place the quesadilla in the heated skillet and cook for 2-3 minutes until the bottom is golden brown.

Carefully flip the quesadilla and cook for another 2-3 minutes until the second side is golden and the cheese is completely melted.

Remove from the skillet and let rest for 1 minute before cutting into wedges.

Repeat with the remaining ingredients to make additional quesadillas.
