Pork Chops with Mojo
Juicy pork chops marinated and cooked in a zesty citrus and garlic mojo sauce. A weeknight Cuban favorite.
Ingredients
- 4 pork chops (1 inch thick)
- 8 garlic cloves, peeled
- 4 tbsp olive oil
- 1/2 cup fresh orange juice
- 3 tbsp fresh lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano

Combine 8 peeled garlic cloves, 4 tbsp olive oil, 1/2 cup fresh orange juice, 3 tbsp fresh lime juice, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp ground cumin, and 1/2 tsp dried oregano in a bowl to make the mojo sauce.

Reserve half the mojo sauce for serving. Pour the remaining sauce over 4 pork chops (1 inch thick) and marinate for at least 15 minutes (or up to 2 hours in the refrigerator).

Heat a large skillet over medium-high heat. Remove chops from marinade, reserving any excess liquid.

Cook chops for 6-7 minutes per side until cooked through (internal temperature 145°F).

Pour the reserved mojo sauce over the chops in the last minute of cooking.

Serve hot with the pan sauce drizzled over the chops.
