Potaje de Garbanzos
A rich Cuban chickpea stew cooked with Spanish chorizo, ham, potatoes, and squash in a savory sofrito broth.
Ingredients
- 2 tbsp olive oil
- 4 oz Spanish chorizo sausage, sliced
- 1 cup smoked ham, diced
- 1 cup yellow onion, diced
- 1 cup green bell pepper, diced
- 4 cloves garlic, minced
- 30 oz chickpeas, drained
- 2 cups Yukon Gold potatoes, diced
- 1.5 cups calabaza squash, diced
- 4 cups chicken broth
- 1 tsp ground cumin
- 2 bay leaves
- 1 tsp salt

Heat 2 tbsp olive oil in a large Dutch oven over medium heat.

Add 4 oz sliced Spanish chorizo sausage and 1 cup diced smoked ham, cooking for 5 minutes until browned and fat renders.

Add 1 cup diced yellow onion, 1 cup diced green bell pepper, and 4 cloves minced garlic to the pot, sautéing for 5 minutes until softened.

Stir in 30 oz drained chickpeas, 2 cups diced Yukon Gold potatoes, 1.5 cups diced calabaza squash, 4 cups chicken broth, 1 tsp ground cumin, 2 bay leaves, and 1 tsp salt.

Bring to a boil, then reduce heat to low, cover, and simmer for 35 minutes until the vegetables are tender.

Ensure meat reaches an internal temperature of 165°F, discard bay leaves, and mash some potatoes against the pot side to thicken.
