Ovos à Transmontana
A traditional Portuguese mountain-style egg dish with crispy potatoes, sausage, and eggs baked until golden. Hearty, warming, and deeply savory with a rustic charm.
Ingredients
- 6 tbsp olive oil
- 1.5 lbs waxy potatoes, thinly sliced
- 1/2 yellow onion, thinly sliced
- 8 oz chourico or smoked sausage, sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 eggs
- 2 tbsp fresh parsley, chopped

Preheat your oven to 400°F.

Heat 6 tbsp olive oil in a large oven-safe skillet over medium-high heat.

Add the sliced 1.5 lbs thinly sliced waxy potatoes and 1/2 thinly sliced yellow onion. Cook, stirring occasionally, until the potato starts to soften and brown, about 8-10 minutes.

Add the 8 oz sliced chourico or smoked sausage slices and cook for another 3-4 minutes until they release their oils.

Season with 1/2 tsp salt and 1/4 tsp black pepper.

Make 4 or 8 small wells in the potato mixture (depending on whether you're making 4 or 8 servings).

Crack the 8 eggs into the wells, being careful not to break the yolks.

Transfer the skillet to the oven and bake until the eggs whites are set but the yolks are still slightly runny, about 5-8 minutes.

Remove from the oven and garnish with 2 tbsp chopped fresh parsley.
