Fried Catfish Strips
Crispy cornmeal-crusted catfish strips seasoned with Cajun spices and fried to a golden crunch. Serves well with fresh lemon wedges and tartar sauce.
Ingredients
- 2 lbs catfish fillets, sliced
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 2 tbsp Cajun seasoning
- 1 cup buttermilk
- 2 tsp hot sauce
- 4 cups vegetable oil

Whisk 1 cup buttermilk and 2 tsp hot sauce together in a shallow bowl.

In a separate shallow dish, combine 1 cup yellow cornmeal, 1/2 cup all-purpose flour, and 2 tbsp Cajun seasoning.

Pour 4 cups vegetable oil into a heavy skillet until it reaches a depth of one inch, then heat to 350 degrees Fahrenheit.

Dip 2 lbs sliced catfish fillets into the buttermilk mixture, then coat thoroughly in the cornmeal mixture.

Fry the strips in batches for 4 to 5 minutes until golden brown and the internal temperature reaches 145 degrees Fahrenheit.

Transfer cooked fish to a wire rack set over a baking sheet to drain before serving.
