Ingredients

  • 2 lbs beef chuck, cut into cubes, cubed
  • 2 medium onions, diced
  • 4 tbsp paprika (Hungarian, if possible)
  • 4 cups beef broth
  • 2 lbs potatoes, cubed
  • 4 medium carrots, sliced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 bay leaves
  • to taste salt and black pepper
  • 2 tbsp vegetable oil
  • 1/2 cup sour cream (for serving)

Instructions

    Heat 2 tbsp vegetable oil in a large pot over medium-high heat. Working in batches, brown 2 lbs cubed beef chuck, cut into cubes on all sides, about 3-4 minutes per side. Remove and set aside.

    In the same pot, sauté 2 medium diced onions until softened, about 5 minutes. Add 4 cloves minced garlic and cook for 1 minute.

    Stir in 4 tbsp paprika (Hungarian, if possible) and 2 tbsp tomato paste, cooking for 1-2 minutes to develop flavor.

    Return beef to the pot and pour in 4 cups beef broth. Add 2 bay leaves, salt and pepper. Bring to a simmer.

    Cover and simmer for 1 hour, stirring occasionally.

    Add 2 lbs cubed potatoes and 4 medium sliced carrots. Continue simmering for 30-40 minutes until vegetables are tender and beef is very tender.
