Green Goddess Tahini Sauce
A vibrant, herb-packed sauce that combines the creaminess of tahini with fresh herbs and bright lemon. Perfect for grain bowls, roasted vegetables, or as a creamy salad dressing.
Ingredients
- 1/2 cup tahini paste
- 1/3 cup water
- 3 tbsp fresh lemon juice
- 1 cup fresh parsley, leaves and tender stems
- 1/2 cup fresh basil leaves
- 1/2 cup fresh cilantro, leaves and tender stems
- 2 tbsp fresh chives
- 2 garlic clove
- 2 tbsp extra-virgin olive oil
- 3/4 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 tsp maple syrup (optional)

In a food processor or blender, combine 1 cup leaves and tender stems fresh parsley, 1/2 cup fresh basil leaves, 1/2 cup leaves and tender stems fresh cilantro, 2 tbsp fresh chives, and 2 garlic clove. Pulse until finely chopped.

Add 1/2 cup tahini paste, 3 tbsp fresh lemon juice, 3/4 tsp salt, 1/2 tsp freshly ground black pepper, and 1 tsp maple syrup (optional) if using. Blend until smooth.

With the machine running, slowly drizzle in 2 tbsp extra-virgin olive oil, then gradually add 1/3 cup water until you reach your desired consistency. For a thinner sauce, add more water a tablespoon at a time.

Taste and adjust seasonings, adding more salt, pepper, or lemon juice as needed.

Transfer to an airtight container and refrigerate for at least 30 minutes to allow flavors to meld.

The sauce will keep in the refrigerator for up to 5 days. If it thickens when stored, thin with a little water before serving.
