Ingredients

  • 8 bone-in, skin-on chicken thighs, patted dry
  • 1 tsp salt
  • 1/2 tsp black pepper, freshly ground
  • 2 tbsp olive oil
  • 6 garlic cloves, minced
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha sauce
  • 1 tbsp unsalted butter
  • 3 green onions, sliced, for garnish
  • 1 tsp sesame seeds, for garnish
  • 4 cups cooked rice, for serving

Instructions

  1. 1

Season 8 patted dry bone-in, skin-on chicken thighs on both sides with 1 tsp salt and 1/2 tsp freshly ground black pepper.

  2. 2

Heat 2 tbsp olive oil in a large skillet over medium-high heat.

  3. 3

Place chicken thighs skin-side down in the hot skillet and cook until the skin is golden brown and crispy, about 5-7 minutes.

  4. 4

Flip the chicken and cook for another 5-7 minutes.

  5. 5

Reduce heat to medium-low and add 6 minced garlic cloves around the chicken. Cook until fragrant, about 30 seconds, being careful not to burn the garlic.

  6. 6

In a small bowl, whisk together 1/4 cup honey, 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tsp sriracha sauce.

  7. 7

Pour the honey garlic sauce over the chicken and bring to a simmer.

  8. 8

Cook, occasionally spooning the sauce over the chicken, until the sauce thickens and the chicken is cooked through, about 5-8 minutes. The internal temperature of the chicken should reach 165°F (74°C).

  9. 9

Add 1 tbsp unsalted butter to the sauce and stir until melted, creating a richer sauce.

  10. 10

Remove from heat and garnish with 3 sliced, for garnish green onions and 1 tsp for garnish sesame seeds.

  11. 11

Serve over 4 cups for serving cooked rice, spooning extra sauce over the chicken and rice.
