Lemongrass Ginger Iced Tea
A fragrant herbal iced tea brewed with fresh lemongrass stalks and sliced ginger, lightly sweetened and served over ice for a clean, citrusy cool-down.
Ingredients
- 4 stalks lemongrass stalks, bruised, cut into 2-inch pieces
- 2-inch fresh ginger, thinly sliced
- 4 cups water
- 2 tbsp granulated sugar or honey
- 2 tbsp fresh lime juice
- as needed ice cubes
- 8 slices lime slices

In a medium saucepan, combine 4 stalks bruised, cut into 2-inch pieces lemongrass stalks and 2-inch thinly sliced fresh ginger with 4 cups water and bring to a boil over high heat.

Reduce heat to medium-low and simmer for 10 minutes to infuse the flavors.

Remove from heat and stir in 2 tbsp granulated sugar or honey until fully dissolved.

Strain through a fine-mesh sieve into a pitcher and let cool to room temperature, then refrigerate until cold.

Stir in 2 tbsp fresh lime juice. Fill glasses with ice, pour the tea over, and garnish with 8 slices lime slices.
