Ingredients

  • 4 stalks lemongrass stalks, bruised, cut into 2-inch pieces
  • 2-inch fresh ginger, thinly sliced
  • 4 cups water
  • 2 tbsp granulated sugar or honey
  • 2 tbsp fresh lime juice
  • as needed ice cubes
  • 8 slices lime slices

Instructions

    In a medium saucepan, combine 4 stalks bruised, cut into 2-inch pieces lemongrass stalks and 2-inch thinly sliced fresh ginger with 4 cups water and bring to a boil over high heat.

    Reduce heat to medium-low and simmer for 10 minutes to infuse the flavors.

    Remove from heat and stir in 2 tbsp granulated sugar or honey until fully dissolved.

    Strain through a fine-mesh sieve into a pitcher and let cool to room temperature, then refrigerate until cold.
