Linzer Torte
Austrian almond shortbread tart with raspberry jam and a distinctive lattice top. A buttery, nutty classic.
Ingredients
- 5 oz unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg yolk
- 1.5 cup all-purpose flour
- 1 cup ground almonds
- 1/2 tsp ground cinnamon
- 1/8 tsp ground cloves
- 1/2 tsp lemon zest
- 1/2 cup raspberry jam
- 1 large egg white (for glaze)
- 1/4 tsp salt

Preheat oven to 350°F. Grease a 9-inch round tart pan.

Cream 5 oz unsalted butter, softened and 1/2 cup granulated sugar together until light and fluffy.

Beat in 1 large egg yolk until fully incorporated.

Mix 1.5 cup all-purpose flour, 1 cup ground almonds, 1/2 tsp ground cinnamon, 1/8 tsp ground cloves, 1/2 tsp lemon zest, and 1/4 tsp salt in a separate bowl.

Fold dry ingredients into the butter mixture until a dough forms.

Press two-thirds of the dough into the prepared pan, forming an even layer.

Spread 1/2 cup raspberry jam evenly over the dough, leaving a 1/2-inch border.

Roll remaining dough between parchment paper and cut into strips. Arrange in a lattice pattern over the jam.

Brush lattice lightly with 1 large egg white (for glaze) for shine.
