Ingredients

  • 2 lbs Brussels sprouts, trimmed and halved
  • 8 slices thick-cut bacon, diced
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground
  • 3 tbsp pure maple syrup
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 2 garlic cloves, minced
  • 1/4 tsp red pepper flakes, optional
  • 1/4 cup pecans, chopped, optional

    Preheat the oven to 400°F (200°C).

    In a large bowl, toss the halved 2 lbs trimmed and halved Brussels sprouts with 2 tbsp olive oil, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper until evenly coated.

    Spread the Brussels sprouts in a single layer on a large rimmed baking sheet, cut side down for maximum caramelization.

    In a small bowl, whisk together the 3 tbsp pure maple syrup, 1 tbsp balsamic vinegar, 1 tsp Dijon mustard, minced 2 minced garlic cloves, and 1/4 tsp optional red pepper flakes (if using). Set aside.

    In a medium skillet over medium heat, cook the diced 8 slices diced thick-cut bacon until it begins to render its fat but is not yet crispy, about 5 minutes.
