Maple-Glazed Bacon Brussels Sprouts
Crispy Brussels sprouts roasted with maple-glazed bacon pieces for a sweet and savory side dish that's perfect for holiday meals or weeknight dinners.
Ingredients
- 2 lbs Brussels sprouts, trimmed and halved
- 8 slices thick-cut bacon, diced
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper, freshly ground
- 3 tbsp pure maple syrup
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 2 garlic cloves, minced
- 1/4 tsp red pepper flakes, optional
- 1/4 cup pecans, chopped, optional

Preheat the oven to 400°F (200°C).

In a large bowl, toss the halved 2 lbs trimmed and halved Brussels sprouts with 2 tbsp olive oil, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper until evenly coated.

Spread the Brussels sprouts in a single layer on a large rimmed baking sheet, cut side down for maximum caramelization.

In a small bowl, whisk together the 3 tbsp pure maple syrup, 1 tbsp balsamic vinegar, 1 tsp Dijon mustard, minced 2 minced garlic cloves, and 1/4 tsp optional red pepper flakes (if using). Set aside.

In a medium skillet over medium heat, cook the diced 8 slices diced thick-cut bacon until it begins to render its fat but is not yet crispy, about 5 minutes.

Using a slotted spoon, transfer the partially cooked bacon to the baking sheet with the Brussels sprouts, distributing it evenly.

Roast in the preheated oven for 15 minutes.

Remove the baking sheet from the oven and drizzle the maple syrup mixture over the Brussels sprouts and bacon. Toss gently to coat.

Return to the oven and continue roasting for an additional 8-10 minutes, or until the Brussels sprouts are tender and caramelized and the bacon is crispy.

If using 1/4 cup chopped, optional pecans, add them during the last 5 minutes of roasting.
