Mlyntsi with Berry Compote
Delicate, tender Ukrainian crepes filled with farmer's cheese and served with a vibrant berry compote - a trendy breakfast or dessert that's both elegant and comforting.
Ingredients
- 2 egg
- 1 cup whole milk
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 2 tsp sugar
- 2 tbsp butter (melted)
- 1/4 tsp vanilla extract
- 1 cup farmer's cheese or ricotta
- 4 tbsp sour cream
- 3 cups frozen mixed berries
- 4 tbsp sugar (for compote)
- 2 tsp lemon juice
- 2 tbsp vegetable oil

In a blender or bowl, combine 2 egg, 1 cup whole milk, 1/2 cup all-purpose flour, 1/4 tsp salt, 2 tsp sugar, 2 tbsp butter (melted), and 1/4 tsp vanilla extract. Blend until smooth. Let the batter rest for 10 minutes.

To make the filling, mix 1 cup farmer's cheese or ricotta with 4 tbsp sour cream in a small bowl.

To make the compote, combine 3 cups frozen mixed berries, 4 tbsp sugar (for compote), and 2 tsp lemon juice in a small saucepan over medium heat. Cook for 5-7 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly. Set aside.

Heat 1 teaspoon of 2 tbsp vegetable oil in an 8-inch nonstick skillet over medium-high heat until shimmering.

Pour about 1/4 cup of batter into the center of the pan and quickly tilt and rotate the pan to spread the batter thinly into a circle.

Cook for about 30 seconds until the bottom is light golden, then flip and cook the other side for 10-15 seconds. Transfer to a plate.

Repeat with remaining batter, lightly oiling the pan as needed.

Spread each crepe with a thin layer of the 1 cup farmer's cheese or ricotta filling, roll tightly, and place on a serving plate.

Drizzle with the warm 3 cups frozen mixed berries compote and serve immediately.
