Moo Goo Gai Pan
Tender chicken and mushrooms in a delicate, savory sauce with vegetables. A light yet satisfying classic Chinese-American dish.
Ingredients
- 1.5 lbs boneless skinless chicken breasts, cubed
- 3 cups mushrooms, sliced
- 1 can canned water chestnuts, drained and halved
- 1 cup frozen peas
- 4 cloves garlic, minced
- 1/2 tsp fresh ginger, minced
- 3 tbsp soy sauce
- 1 cup chicken broth
- 2 tbsp cornstarch
- 1/4 cup water
- 3 tbsp vegetable oil
- to taste salt and white pepper

Season 1.5 lbs cubed boneless skinless chicken breasts with to taste salt and white pepper. Heat 3 tbsp vegetable oil in a large skillet over high heat.

Add chicken and cook for 4-5 minutes until browned and cooked through. Internal temperature should reach 165°F. Transfer to a plate.

Add 4 cloves minced garlic and 1/2 tsp minced fresh ginger to the skillet and cook for 30 seconds until fragrant.

Add 3 cups sliced mushrooms and stir-fry for 2-3 minutes until they begin to soften.

Pour 3 tbsp soy sauce and 1 cup chicken broth into the skillet.

In a small bowl, mix 2 tbsp cornstarch with 1/4 cup water to create a slurry.

Slowly stir the slurry into the liquid until the sauce thickens, about 1-2 minutes.

Add 1 can drained and halved canned water chestnuts and 1 cup frozen peas. Return chicken to the skillet and stir to combine. Cook for 1 minute.
