Vegetable Fried Rice
Fluffy rice stir-fried with colorful vegetables and eggs in a savory sauce. A trending plant-based favorite that's complete and satisfying.
Ingredients
- 4 cups cooked white rice (preferably day-old)
- 4 eggs, beaten
- 1.5 cups frozen peas and carrots
- 1 cup frozen corn
- 1/2 bell pepper, diced
- 4 cloves garlic, minced
- 1/2 tsp fresh ginger, minced
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 3 tbsp vegetable oil
- to taste salt and black pepper
- 2 scallions, sliced

Heat half the 3 tbsp vegetable oil in a large skillet over high heat.

Pour beaten 4 eggs into the skillet and scramble until cooked through. Transfer to a plate and set aside.

Add remaining vegetable oil to the skillet.

Add 4 cloves minced garlic and 1/2 tsp minced fresh ginger, cook for 30 seconds until fragrant.

Add 1/2 diced bell pepper and stir-fry for 1-2 minutes.

Add 4 cups cooked white rice (preferably day-old), breaking up any clumps. Stir-fry for 2-3 minutes.

Add 1.5 cups frozen peas and carrots and 1 cup frozen corn. Stir and cook for 2 minutes.

Pour 3 tbsp soy sauce over the rice and stir to combine. Add cooked eggs back to the skillet.

Drizzle with 1 tsp sesame oil and top with 2 sliced scallions. Serve immediately.
