  • 4 cups cooked rice, cooled
  • 1 lb pork tenderloin or pork chops, diced
  • 3 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1.5 cups frozen peas and carrots
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp white pepper
  • 2 eggs, beaten
  • 3 scallions, chopped

Instructions

    Heat 3 tbsp vegetable oil in a large skillet or wok over medium-high heat.

    Add 1 lb diced pork tenderloin or pork chops and cook for 4-5 minutes, breaking it apart as it cooks, until cooked through. Remove to a plate.

    Add a bit more oil if needed and stir-fry 1.5 cups frozen peas and carrots for 1-2 minutes until warmed through. Add 3 cloves minced garlic and cook for 30 seconds until fragrant.

    Push the vegetables to the side of the pan. Add the beaten 2 eggs and scramble until just cooked, about 1 minute.

    Add 4 cups cooked rice, cooled to the pan, breaking up any clumps, and stir-fry for 2-3 minutes until the rice is heated through and coated evenly.
