Okra Soup
A silky, savory West African soup with tender okra, meat, and aromatic spices. The okra creates a naturally creamy texture without added cream.
Ingredients
- 12 oz fresh okra, sliced
- 12 oz beef chuck or stew meat, cubed
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1/2 tsp fresh ginger, minced
- 6 cups beef broth
- 14 oz canned diced tomatoes
- 1/2 tsp chili powder
- 1/4 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper

Heat oil in a large pot over medium-high heat. Add 12 oz cubed beef chuck or stew meat and brown on all sides, about 8 minutes. Remove and set aside.

Sauté 1/2 cup diced onion, 2 cloves minced garlic, and 1/2 tsp minced fresh ginger in the same pot for 2 minutes until fragrant.

Add 1/2 tsp chili powder and 1/4 tsp dried thyme, stir for 30 seconds.

Pour in 6 cups beef broth and 14 oz canned diced tomatoes. Return beef to pot and bring to a simmer.

Simmer for 20 minutes, then add 12 oz sliced fresh okra. Cook for another 15 minutes until okra is tender.

Season with 1/2 tsp salt and 1/4 tsp black pepper. Serve hot over rice.
