Plantain Cake
A moist cake spiked with ginger and nutmeg, highlighting the deep sweetness of ripe plantains.
Ingredients
- 4 large ripe plantains, mashed
- 2 cups all-purpose flour
- 2/3 cup brown sugar
- 1/2 cup coconut oil, melted
- 2 eggs, beaten
- 2 tsp baking powder
- 1 tsp fresh ginger, grated
- 1/2 tsp ground nutmeg
- 1/2 tsp salt

Preheat the oven to 350 degrees F and grease an eight inch square baking pan.

Whisk together 2 cups all-purpose flour, 2 tsp baking powder, 1/2 tsp ground nutmeg, and 1/2 tsp salt in a bowl.

In a separate large bowl, combine 4 large mashed ripe plantains, 2/3 cup brown sugar, 1/2 cup melted coconut oil, 2 beaten eggs, and 1 tsp grated fresh ginger.

Fold the dry ingredients into the wet mixture until just combined.
