Questions

How long does Kapusniak take?

As written, 100 minutes: 25 of prep and 75 of cooking. The longest single stretch is step 3, at 1 hour.

What internal temperature should Kapusniak reach?

For Kapusniak, the target internal temperature is 145 F (about 65 C), given in step 3. A probe thermometer removes the guesswork.

Can I skip the searing in Kapusniak?

Step 1 reads: "Brown 1 lb cut into 1-inch cubes boneless pork shoulder on all sides, about 8 minutes." You can, but you give up flavor. The browning in step 1 builds the savory base the rest of the dish is seasoned against. Give the pieces room so the pan stays hot.

What can I use instead of sour cream in Kapusniak?

The entry for Kapusniak calls for 1/2 cup sour cream (for serving). In its place: Full-fat plain Greek yogurt, measure for measure. In hot sauces, add it off the heat.

Can I make Kapusniak dairy-free?

Yes. The dairy in Kapusniak is 1/2 cup sour cream (for serving). Swap the sour cream for thick coconut yogurt with a squeeze of lemon. The richness shifts slightly, but the method does not change.
