Ingredients

  • 12 oz breakfast sausage links or patties, sliced into rounds
  • 1 lb sweet potatoes, diced, 1/2 inch
  • 1 bell pepper (any color), diced
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley or chives, chopped

    Preheat oven to 425°F. Lightly oil a large rimmed sheet pan.

    In a large bowl, toss 1 lb diced, 1/2 inch sweet potatoes with 2 tbsp olive oil, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp kosher salt, and 1/4 tsp black pepper until well coated.

    Spread the sweet potatoes in a single layer on the prepared sheet pan. Roast for 15 minutes.

    Remove pan from oven and push the sweet potatoes toward the edges. Add 1 diced bell pepper (any color), 1 diced yellow onion, and 12 oz sliced into rounds breakfast sausage links or patties to the center and around the sweet potatoes.

    Return to oven and roast for another 18 to 20 minutes, stirring once halfway through, until the sweet potatoes are tender and golden and the breakfast sausage links or patties is cooked through.

    Taste and adjust seasoning. Garnish with 2 tbsp chopped fresh parsley or chives and serve directly from the pan.
