  • 2 lbs sweet potatoes, peeled and cubed
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground cinnamon
  • 1/2 tsp ground cumin
  • 2 tbsp fresh parsley, chopped
