Roasted Sweet Potatoes
Sweet potatoes roasted with olive oil and warm spices until caramelized and tender. A versatile side that works for weeknights and holiday tables alike.
Ingredients
- 2 lbs sweet potatoes, peeled and cubed
- 3 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper, freshly ground
- 1/2 tsp smoked paprika
- 1/4 tsp ground cinnamon
- 1/2 tsp ground cumin
- 2 tbsp fresh parsley, chopped

Preheat oven to 425 degrees F and line a large baking sheet with parchment.

Peel and cut 2 lbs peeled and cubed sweet potatoes into 1-inch cubes.

Toss sweet potatoes with 3 tbsp olive oil, 1/2 tsp salt, 1/4 tsp freshly ground black pepper, 1/2 tsp smoked paprika, 1/4 tsp ground cinnamon, and 1/2 tsp ground cumin.

Spread in a single layer on the baking sheet, leaving space between pieces.

Roast for 25-30 minutes, flipping halfway, until caramelized and tender.
