Tennessee Onions
Thick slices of sweet onions seasoned with herbs, dotted with butter, and baked under a bubbling blanket of three melted cheeses.
Ingredients
- 3 large Vidalia or sweet onions, sliced into rings
- 4 tbsp unsalted butter, cut into pats
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1/4 tsp cayenne pepper
- 1 cup sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tbsp fresh flat-leaf parsley, minced

Preheat the oven to 375 degrees F and lightly grease a 9x13-inch baking dish.

Arrange 3 large sliced into rings Vidalia or sweet onions in overlapping, even layers across the bottom of the prepared dish.

In a small ramekin, mix together 1 tsp garlic powder, 1 tsp dried oregano, 1/2 tsp dried thyme, 1/2 tsp kosher salt, 1/2 tsp freshly ground black pepper, and 1/4 tsp cayenne pepper.

Sprinkle the seasoning mixture evenly over the onions, then distribute 4 tbsp cut into pats unsalted butter across the top.

Combine 1 cup shredded sharp cheddar cheese, 1 cup shredded Monterey Jack cheese, and 1/2 cup grated Parmesan cheese in a bowl, then scatter the cheese mixture evenly over the onions.

Bake uncovered for 30 to 35 minutes until the onions are tender and the cheese is melted, bubbly, and golden brown.

Remove from the oven, garnish with 2 tbsp minced fresh flat-leaf parsley, and let rest for 5 minutes before serving warm.
