Tomato Bacon Jam

A sweet and smoky spread made by slow-cooking crispy bacon with tomatoes, onions, brown sugar, and a splash of vinegar until thick and jammy. Incredible on burgers, biscuits, or a cheese board.

Ingredients

  • 8 oz thick-cut bacon, roughly chopped
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 2 cups crushed tomatoes (canned)
  • 1/4 cup light brown sugar, packed
  • 2 tbsp apple cider vinegar
  • 2 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper, freshly ground
  • 1/8 tsp cayenne pepper

    In a large heavy skillet over medium heat, cook 8 oz roughly chopped thick-cut bacon until crispy and the fat has rendered, about 8 to 10 minutes. Transfer bacon to a paper towel-lined plate with a slotted spoon, leaving about 2 tablespoons of drippings in the pan.

    Add 1 large diced yellow onion to the drippings and cook over medium heat, stirring occasionally, until softened and beginning to caramelize, about 10 minutes.

    Add 4 cloves minced garlic cloves and cook for 1 minute until fragrant.

    Stir in 2 cups crushed tomatoes (canned), 1/4 cup packed light brown sugar, 2 tbsp apple cider vinegar, 2 tsp Worcestershire sauce, 1/2 tsp smoked paprika, 1/4 tsp freshly ground black pepper, and 1/8 tsp cayenne pepper. Return the cooked bacon to the pan.

    Reduce heat to low and simmer uncovered, stirring every 5 minutes, until the mixture is thick, jammy, and deeply colored, about 30 to 35 minutes.

    Taste and adjust seasoning. Let cool for 10 minutes, then pulse briefly in a food processor if a smoother texture is desired. Transfer to a clean jar. Keeps refrigerated for up to 2 weeks.
