Uzvar
A traditional Ukrainian fruit compote made with dried fruits and warming spices - this sweet, aromatic beverage is typically served cold or warm and is perfect year-round.
Ingredients
- 2 oz dried apple
- 2 oz dried plum (prune)
- 2 oz dried pear
- 2 oz dried apricot
- 1 oz dried rosehip
- 1/2 cinnamon stick
- 4 clove
- 6 cups water
- 2 tbsp honey (optional)
- 1/2 tsp lemon zest (optional)

Rinse all the dried fruits under cold water to remove any dust.

Bring 6 cups water to a boil in a large pot.

Add 2 oz dried apple, 2 oz dried plum (prune), 2 oz dried pear, 2 oz dried apricot, and 1 oz dried rosehip to the boiling water.

Add 1/2 cinnamon stick and 4 clove to the pot.

Reduce heat to low and simmer for 15-20 minutes until the fruits have softened and the liquid has absorbed their flavors.

Remove from heat and let cool slightly.

Strain through a fine-mesh sieve into a serving pitcher, pressing gently on the fruit to extract all the liquid.

Stir in 2 tbsp honey (optional) if desired for additional sweetness.

Serve warm or chilled, garnished with a pinch of 1/2 tsp lemon zest (optional) if desired.
