Air Fryer Sweet Potato Fries
Lightly seasoned sweet potato fries air-fried to a crispy exterior with a tender, naturally sweet interior — a healthier vegan alternative to deep-fried fries.

- 2 lbs sweet potatoes, peeled, matchsticks
- 2 tbsp olive oil
- 2 tbsp cornstarch
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- 1/4 tsp black pepper

Soak 2 lbs peeled, matchsticks sweet potatoes in cold water for 20 minutes. Drain and pat completely dry with paper towels — this is important for crispiness.

In a large bowl, toss the dried sweet potato fries with 2 tbsp olive oil until coated, then sprinkle with 2 tbsp cornstarch, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1 tsp kosher salt, and 1/4 tsp black pepper. Toss again until evenly coated.

Preheat the air fryer to 380°F for 3 minutes.

Arrange the fries in a single layer in the air fryer basket without overlapping. Cook at 380°F for 8 minutes, shake the basket, then cook for another 8 to 10 minutes until the edges are golden and crisp.
