Alligator Bites
Tender pieces of alligator meat marinated in seasoned buttermilk, coated in a cornmeal crust, and fried until crisp.
Ingredients
- 1 lb alligator meat, cubed
- 1 cup buttermilk
- 1 tbsp hot sauce
- 1 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1 tbsp Cajun seasoning
- 2 cups vegetable oil

Whisk 1 cup buttermilk and 1 tbsp hot sauce together in a medium bowl.

Add 1 lb cubed alligator meat to the bowl and refrigerate for 30 minutes.

In a shallow dish, combine 1 cup all-purpose flour, 1/2 cup yellow cornmeal, and 1 tbsp Cajun seasoning.

Heat 2 cups vegetable oil in a heavy pot over medium-high heat until it reaches 350°F.

Dredge the marinated cubed alligator meat in the flour mixture to coat evenly.

Fry in batches for 3 to 4 minutes until golden brown and the internal temperature reaches 160°F.
