Aloo Pie
A beloved Trinidadian street food featuring golden-fried pastry pockets filled with spiced mashed potatoes, chickpeas, and aromatics, often topped with tamarind and hot sauce.
Ingredients
- 2 lbs potatoes, peeled
- 1 can canned chickpeas, drained
- 1/4 cup onion, minced
- 2 cloves garlic, minced
- 2 tsp curry powder
- 1/2 tsp turmeric
- 2 tbsp fresh cilantro, chopped
- 3 cups all-purpose flour
- 1 cup water
- 1/2 tsp salt
- 2 cups vegetable oil (for frying)
- 4 tbsp tamarind paste

Boil 2 lbs potatoes until fork-tender, about 15 minutes. Drain and mash until smooth.

Heat 1 tbsp oil in a pan. Add 1/4 cup minced onion and 2 cloves minced garlic, cooking for 1 minute.

Stir in 2 tsp curry powder and 1/2 tsp turmeric, then add mashed potatoes and 1 can canned chickpeas. Mix well, then fold in 2 tbsp chopped fresh cilantro. Cool slightly.

Make dough: Mix 3 cups all-purpose flour and 1/2 tsp salt. Add 1 cup water gradually, kneading until smooth. Let rest 10 minutes.

Divide dough into 6 balls. Roll each into a thin circle. Place filling on half, fold, and seal edges by pressing with a fork.

Heat 2 cups vegetable oil (for frying) in a deep pot to 350°F. Carefully fry pies until golden brown, about 2-3 minutes per side. Drain on paper towels.

Mix 4 tbsp tamarind paste with 2 tbsp water to make a sauce. Serve pies with tamarind sauce and hot sauce.
