Channa and Roti
A beloved Trinidadian vegetarian meal pairing a spiced chickpea curry with warm, soft roti flatbread for scooping and savoring every flavorful bite.
Ingredients
- 2 cans canned chickpeas, drained
- 1/2 cup onion, finely diced
- 4 cloves garlic, minced
- 2 tsp fresh ginger, minced
- 3 tbsp curry powder
- 1/2 tsp turmeric
- 1/4 cup fresh cilantro, chopped
- 1 cup coconut milk
- 3 tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 roti (or flatbread)

Heat 3 tbsp vegetable oil in a large pot over medium heat. Add 1/2 cup finely diced onion and cook until softened, about 2 minutes.

Stir in 4 cloves minced garlic and 2 tsp minced fresh ginger, cooking for 30 seconds until fragrant.

Add 3 tbsp curry powder and 1/2 tsp turmeric, toasting for 1 minute while stirring.

Pour in 1 cup coconut milk and stir well. Gently fold in 2 cans canned chickpeas, 1/2 tsp salt, and 1/4 tsp black pepper.

Bring to a gentle simmer and cook for 10-12 minutes, stirring occasionally, until flavors meld and the curry thickens slightly.

Stir in 1/4 cup chopped fresh cilantro. Taste and adjust seasoning as needed.

Warm 8 roti (or flatbread) according to package directions. Serve alongside the hot channa for scooping and eating.
