  • 24 Medjool dates, pitted
  • 12 strips thin-cut bacon strips, halved crosswise
  • 4 oz soft goat cheese (chevre)
  • 24 wooden toothpicks, soaked in water 10 min
  • 1/4 tsp black pepper, freshly ground

    Preheat oven to 400°F (200°C). Line a baking sheet with a wire rack.

    Use a small knife to slice each 24 pitted Medjool dates open lengthwise without cutting all the way through. Fill each date with about 1 teaspoon of 4 oz soft goat cheese (chevre).

    Wrap one half-strip of 12 strips halved crosswise thin-cut bacon strips tightly around each stuffed date and secure with a wooden toothpicks soaked in water.

    Arrange the wrapped dates on the wire rack, seam side down. Season with 1/4 tsp freshly ground black pepper.
