Buñuelos de Viento
Light and airy fritters fried until golden brown and dusted with powdered sugar. These delicate pastry puffs expand during frying to create a hollow, soft interior.
Ingredients
- 1 cup water
- 1/4 cup unsalted butter, cubed
- 2 tbsp granulated sugar
- 1 tsp lemon zest, finely grated
- 1/4 tsp salt
- 1 cup all-purpose flour, sifted
- 4 large eggs, beaten
- 4 cups vegetable oil
- 1/4 cup powdered sugar

Combine 1 cup water, 1/4 cup cubed unsalted butter, 2 tbsp granulated sugar, 1 tsp finely grated lemon zest, and 1/4 tsp salt in a saucepan and bring to a boil over medium heat.

Add 1 cup sifted all-purpose flour all at once and stir vigorously with a wooden spoon until a dough ball forms and pulls away from the sides.

Remove saucepan from heat and cool for 5 minutes, then beat in 4 beaten large eggs one at a time until smooth.

Heat 4 cups vegetable oil in a deep pot to 350 degrees F, drop small spoonfuls of dough into hot oil, and fry until puffed and golden brown on all sides.

Drain fritters on paper towels and dust generously with 1/4 cup powdered sugar before serving.
