Basque Cheesecake
A famous crustless cheesecake with a deeply caramelized, dark brown exterior and a creamy, custard-like center. It bakes at high heat for a signature rich flavor and rustic finish.
Ingredients
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 cup heavy cream
- 2 tbsp all-purpose flour, sifted
- 1/2 tsp fine sea salt

Preheat oven to 400F and line an 8-inch springform pan with overlapping sheets of parchment paper.

Beat 24 oz softened cream cheese and 1 cup granulated sugar in a large bowl until smooth and sugar dissolves.

Beat in 4 large eggs one at a time until fully incorporated.

Stir in 1 cup heavy cream, 2 tbsp sifted all-purpose flour, and 1/2 tsp fine sea salt until mixture is homogenous.

Pour batter into pan and bake for 45 to 50 minutes until deeply browned on top with a jiggle in center.
