Ingredients

  • 1.5 lbs pork belly, cut into 1 inch cubes
  • 4 large eggs, hard-boiled, peeled, halved
  • 2 tbsp vegetable oil
  • 4 shallots, thinly sliced
  • 4 garlic cloves, minced
  • 4 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp rock sugar (or regular sugar)
  • 1/4 cup rice wine or dry sherry
  • 1 cup chicken broth
  • 2 star anise pods
  • 1/2 cinnamon stick
  • 2 scallions, chopped
  • 3 cups cooked white rice

Instructions

    Bring a small pot of water to boil and cook 4 large eggs for 10 minutes. Transfer to ice water, then peel and halve. Set aside.

    Heat 2 tbsp vegetable oil in a large skillet or Dutch oven over medium-high heat.

    Add 1.5 lbs cut into 1 inch cubes pork belly and brown on all sides, about 6-8 minutes. Remove and set aside.

    Add 4 thinly sliced shallots to the pot and cook for 2 minutes until golden.

    Return pork to the pot. Add 4 tbsp soy sauce, 2 tbsp dark soy sauce, 2 tbsp rock sugar (or regular sugar), and 1/4 cup rice wine or dry sherry.

    Add 1 cup chicken broth, 2 star anise pods, and 1/2 cinnamon stick.

    Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes, stirring occasionally.
