Ginisang Pechay
A classic Filipino stir fry of bok choy sauteed with garlic, onions, tomatoes, and savory ground pork.
Ingredients
- 1 tbsp neutral cooking oil
- 4 garlic cloves, minced
- 1 small yellow onion, diced
- 1 medium roma tomato, chopped
- 1/2 lb ground pork
- 1 tbsp fish sauce
- 1/4 cup water
- 1 lb pechay or bok choy, chopped
- 1/4 tsp ground black pepper

Heat 1 tbsp neutral cooking oil in a skillet over medium heat.

Sauté 4 minced garlic cloves, 1 small diced yellow onion, and 1 medium chopped roma tomato for 3 to 4 minutes until softened.

Add 1/2 lb ground pork and cook for 5 to 6 minutes, breaking it up, until the pork reaches an internal temperature of 160°F.

Season with 1 tbsp fish sauce and 1/4 tsp ground black pepper, then stir in 1/4 cup water.

Fold in 1 lb chopped pechay or bok choy and cook for 2 to 3 minutes until the stems are tender crisp and leaves are wilted.
